Pecan Pie Squares, Bars and Tarts

I love clean desserts. The obvious reason being that I feel less guilty stuffing my face with dates compared to doughnuts.

But it’s also about being a responsible citizen. Spreading the evils of refined sugar to fellow human beings just isn’t the right thing to do. Just not in my heart, you know? At least not when there’s equally delicious alternatives out there like this one.

This post is for everyone who loves or has yet to try the Pecan Pie Squares recipe from That Clean LifeHere are some ways you can get the most out of them.

Pecan Pie Squares

The original recipe is pretty spectacular already and goes great with coffee or tea. The date filling just blows my mind.

Pecan Pie Tarts

I immediately thought of butter pecan tarts when I saw the recipe and knew I had to replicate the form. They are just too cute. I recommend using a mini muffin pan (the smallest you can find).

Instructions:

  1. Preheat the oven and make the crust as directed in the recipe.
  2. Lightly grease a mini muffin pan with coconut oil or EVOO.
  3. Press the crust mixture into the muffin pan to create a shell.
  4. Bake the unfilled shells for the first 10 minutes. While baking, make the date filling.
  5. After 10 minutes, remove crusts from oven and pour in your desired amount of date filling.
  6. Press a pecan into the center and continue baking for the remaining 10 minutes.
  7. Let cool completely before removing.

Dark Chocolate Pecan Pie Bars

I think I have a melted-dark-chocolate-on-everything problem. These are SO good with dark chocolate. My recommendation is to freeze them and eat them right out of the freezer. Best thing ever!

Instructions

  1. Make the pecan pie squares according to the original recipe.
  2. Place a small pot within a larger pot of water and bring to a boil (you don’t need much water).
  3. Chop dark chocolate and place in small pot to melt. Stir until melted, then remove from heat.
  4. Place your pecan pie squares on a baking pan lined with wax or parchment paper.
  5. Dip your squares into the chocolate or use a spoon to drizzle the chocolate over top.
  6. Place your “dressed” pecan pie squares on the paper and let harden in freezer for a few minutes.
  7. Store in airtight container in freezer. Can be eaten frozen.

For Sweet Potato Chip Lovers Worldwide

Dear Maude + Phyllis,

I’m distraught. Is it just me or does this week’s That Clean Life meal plan not have enough sweet potato chips? I don’t mean to complain about my first world problems but, in this day and age and all the talk about “treating yo’ self” I should have unlimited chips when I want them. Am I a selfish person? You’re my favourite, most inspiring and therapeutic blogger of random food and house stuff. Please help, I’m desperate.

I’m really, truly flattered by your comment. Thank you for following my blog. First, it is absolutely normal to feel the way you do about these edible pieces of heaven. This happens to normal people everywhere around the world. I am sure you are not alone. I can offer a few suggestions. Sweet Potato Chips with Dip

Sweet Potato Chips and Spicy Mango Guacamole are in this week’s Paleo challenge by That Clean Life. Truthfully, I may never make guacamole any other way from here on out. Creamy, sweet and a perfect pinch of sour. I chopped up a handful of frozen mangoes which defrosted quickly after mixing into the avocado.

Sweet Potato Chips in Soup

I’m happy to report that the chips also maintain their flavour and textural integrity in the Cream of Broccoli Soup also in the Paleo Challenge. It adds a nice crunch and slight sweetness to the dish. I topped it off with Minimalist Baker’s Vegan Parmesan Cheese (cashews, nutritional yeast, garlic powder and salt) which is pretty on point. A little questionable if you’re going strictly Paleo but still relatively clean!

Sweet Potato Nachos

Guys, hold the phone. Is this the same spicy mango guac from the chip/dip segment? Well it’s looking mighty delicious in nacho form with a layer of shredded chicken. I’m thinking you could also add Greek yogurt and green onions. I saw this delight on Pinterest and knew it had to be done.

Let’s just say, it tastes too wrong to be right.

Dark Chocolate Sweet Potato Chips

Thanks to Minimalist Baker for this one. Weird, so weird and ironic. But actually is so amazing. The potatoes add just enough sweetness to offset the dark chocolate bitterness perfectly.

That Clean Life: Paleo Granola 4 Ways

Have you heard? This week, we’re going Paleo for the clean eating challenge with That Clean Life! Usually, we highlight a recipe each day of the challenge with a fun photo spread. We’re doing things a little differently this time around.

This time, we’re gonna hand-pick and play around with just a few special recipes from challenge week. These posts will include tips and tricks, some modifications and how to use the recipe with other clean recipes. By the way, these variations aren’t Paleo but are totally worth experimenting after this week’s paleo challenge. I love making a huge batch of something and using it in various ways.

So let’s start off with this stellar Paleo Granola!

1. Paleo Granola with Almond Milk

Easy breezy. Just add almond milk (or haphazardly dump granola all over the place as seen in photo). I’ve had this at work a few times, leaving a secret stash of granola in the fridge and just bringing a small jar of almond milk to add to. Heavenly.

Also, we followed the suggestions of other That Clean Life members to add the coconut flakes halfway into the baking to prevent burning. The hardest part about this recipe is waiting for it to cool completely. Ugh, I know. The worst.

2. Paleo Granola with (not-so-Paleo) Greek Yogurt/Oatmeal, Fruit & Honey

Over the weekend, we tried the Paleo Granola with Greek yogurt, bananas and a drizzle of honey which was magnificent. I imagine it’d also be spectacular in your Overnight Blueberry Oats or Steel Cut Oats with Frozen Fruit. This one’s an obvi.

3. Dark Chocolate Granola Bites

Okay, get ready. It’s decadent and crunchy with a touch of sweetness. It’s an adaptation of one of my favourite desserts from That Clean Life, the Dark Chocolate Pomegranate Almond Love Bites from Valentine’s Day. Instead of pomegranate seeds and almond slivers, just sprinkle a bit of the granola on the melted dark chocolate discs before they cool.

I store these in a container in the freezer (alongside other variations) so I always have something to satisfy my sweet kick.

4. Granola x Pecan Pie Bars

Last but not least, the Pecan Pie Squares and Paleo Granola made love and gave birth to this wonderful thing. For next-level amazingness, evenly sprinkle and gently press the granola into your Pecan Pie Square recipe for the remaining 10-15 minutes in the oven. You can reduce the amount of pecans from the original recipe.

This makes for a really tasty and filling snack, especially needed between meals during my long 12-hour shifts.

I love that I have access to a growing database of clean (and surprisingly yummy) recipes that can easily be slotted into weekly meal plans. I love that my grocery list is automatically generated. I love that I can be lazy and use pre-made meal plans. Oh, it also helps to be part of a positive and motivated community. The two of us have never cooked more consistently at home than we have over the last two months.

So… 

We want to spread the love to people like us who’ve been through the same struggle. I have total admiration for those who can do this all on their own. But for people like us who need that extra push, this is worth trying.
